| Named for the indigo-stained birch cabinetry in her log cabin kitchen, The Blue Birch Bakery is the realization of a life-long dream of proprietor, Manda Welsh. Her “gentlewoman’s farm”, situated on five rolling acres in the rural Kiski Valley, produces high quality free-range eggs and the finest baked goods. All of our products contain only the very best ingredients available. We use only King Arthur flour because it's milled from 100% American hard red wheat, never imported wheat. The eggs in our products come from our own flock of free-range hens, most of which were hatched right here on the farm. Almost all of the fruit and nuts we use are organically grown, and only the best sweet cream butter finds it's way into our goodies. You will NEVER find high-fructose corn syrup on our list of ingredients! We hope that you will consider The Blue Birch Bakery for all of your occasions, both special and every-day. A Word About Our Eggs.... “Happy chickens lay healthy eggs!” That’s our motto when it comes to raising the chickens that supply our eggs for use in the bakery and for retail sales. Our coop currently houses twenty-five hens and three roosters and all of them are truly pets, cared for in the most humane way possible. They are kept on pesticide and herbicide-free pasture, eating grass, weeds and bugs (and the occasional toad or mouse – chickens are omnivores!). They spend nights and cold rainy or snowy days in their warm, dry coop and covered run, safe from predators and the weather. Our birds are fed a custom blend of whole grains including: whole wheat, whole oats, barley, millet, flax seeds, alfalfa, black oil sunflower seeds, corn and soybeans. Our customers never have to worry about hormones or antibiotics in the eggs. We are strongly against doping the hens with hormones, antibiotics and artificial light to increase their egg production. Not every hen lays an egg every day and that’s exactly the way Mother Nature intended! Studies have shown that pasture-raised hens lay eggs nutritionally superior to eggs from hens in large factory productions. Access to a natural diet and fresh air has a dramatic effect on the quality of eggs. For example, farm eggs have been found to have half the cholesterol of factory eggs! Additionally, farm eggs have twice the Vitamin E, four times the Omega-3 fatty acids, four times the beta carotene, 50% more folic acid and 70% more B12 than your average supermarket egg. The Ameraucana’s lay eggs in beautiful muted shades of green and blue while the other breeds lay eggs in all shades of brown. | Frequently Asked Questions Where is Bell Township? Bell is located in northern Westmoreland County about twenty-five miles from Greensburg (to the south), Monroeville (to the west) and Indiana (to the north). It is easy to reach via routes 819, 380 or 286. Do you deliver? All cakes will be delivered for a flat $15 fee within a 50-mile radius. We require a minimum order of $30 for all other items to qualify for delivery. A $15 fee also applies to those deliveries. Do you ship? We will ship all items except cakes via USPS overnight delivery according to the USPS postal rates. The customer will be responsible for paying the shipment fees. How far in advance do you need an order? Cakes require at least two weeks notice…preferably four weeks for a custom design (i.e. wedding, shower, other large party). Other items require five days notice. During market season, we will accept orders for pick-up at the Ligonier Country Market of usual market items ( scones, muffins, bread, biscotti) until 5:00pm Thursday evening. Do you require deposits? We require a 50% deposit on all cakes due at the time of order. The deposit will be refunded if the order is cancelled up to 7 business days before the order is due. If the order is cancelled after that date, no refund is issued. Do you sell eggs all year? Yes, but we can’t guarantee availability during the winter months. The shorter days affect the hen’s laying cycles and they usually lay much less until the days get longer again. We believe that the “break” in laying is beneficial to the health of our hens. Therefore we don’t supply them with artificial light to increase egg production. Mother Nature knows what she’s doing! We do not ship or deliver eggs…pick-up only! |
